Banana Cake with Peanut Butter Coffee Frosting

Banana Cake with Peanut Butter Frosting:

2 cups sifted flour
½ tsp baking powder
¾ tsp baking soda
½ tsp salt
¼ cup milk (room temp)
1 cup mashed banana
½ cup shortening or margarine
1 ½ cups sugar
2 beaten eggs
1 tsp vanilla

Peanut Butter Coffee Frosting:

½ box powdered sugar (approx 2 cups)
2 heaping T PB
1 T butter
1 tsp vanilla
2-6 T coffee

  1. Mix wet ingredients and stir in dry ingredients until they’re well incorporated.
  2. Bake at 375 F for 30-45 mins in 13 x 9 pan
  3. While baking, prepare frosting. Mix all dry ingredients with an egg beater until fluffy. Stir in enough coffee until it’s smooth and spreadable. You can always add a little extra coffee if it gets dried out.
  4. Wait until cake is cooled to ice it and enjoy.
